I would check in device manager to be sure the USB ports aren't being shut off to conserve power. If it's set to "allow this device to shut off to conserve power" uncheck it. Repeat for all USB ports and then see if it happens again. I had this once but only on a single display on the dock. It only happened at random on office applications. A repair install of office fixed it. Finally had a chance to install specific drivers for the external monitors - updating them via Device Manager - and that seems to have done the trick.
